The wonderfully named Ráth Salach or Dirty fort is a former ‘Gentleman’s house' dating to around 1803. The estate has been shaped over a thousand years by generations of aristocrats and labourers to make it uniquely suited as a wedding backdrop. The beef is amazing – so I honour the chefs here too :)
